General Statement

Culinary Services (CS), a division of Auxiliary Services, provides meals for over 12,000 customers a day becoming an integral part of campus life and the overall college experience. CS proudly provides Montana State University students with not only a repertoire of various cuisines, cooking styles, and flavors, but a comfortable atmosphere to meet friends, study, and simply relax. The division is comprised of 2 residential dining halls, 9 retail operations, Brick Breeden Fieldhouse and Bobcat Stadium Concessions, Fork in the Road food truck, MSU Catering, Indulge In-House Bakery & Salads, and the Farm to Campus Program.

The dining halls serve over 10,000 meals per day and are open 7 days a week from 7am – Midnight providing breakfast, lunch, dinner, and Late Night Bites. Specialty dinners are served multiple times a month highlighting Montana Made, holidays and other special events, and student/parent recipes.

Duties and Responsibilities

  • Provides active supervision of culinary staff (full time and student).

  • Skillfully prepares a wide variety of recipes while positively and professionally interacting with customers.

  • Ensures quality product is being served.

  • Assists with recipe and menu development.

  • Supervises operations of cash registers and reconciling of cash bags.

  • Operates the food truck during the summer months, other special events, at MSU concerts, and at home Bobcat Football games.

  • Performs a variety of administrative tasks in support of the operations.

  • Regularly works in department operations in day to day activities as needed.

  • Assists with training of culinary staff.

  • Properly handles food in accordance with FDA food codes.

  • Directs staff in the cleaning of areas and equipment in accordance with the sanitarians recommendations.

  • Directs the cleaning, disposition and storage of foods, supplies, and equipment.

  • Performs other general kitchen duties.

  • And actively contributes to the team by performing other duties as needed in support of the department’s mission.

Required Qualifications – Experience, Education, Knowledge & Skills

  • Progressively responsible high volume cooking experience and/or cooking multiple cuisines or an equivalent combination of relevant education and experience.

  • Experience leading, directing, and/or training staff.

  • Cash handling experience.

  • Experience providing excellent customer service.

Preferred Qualifications – Experience, Education, Knowledge & Skills

  • Advanced degree or certificate in the hospitality, culinary arts, or related field(s).

  • Experience producing grab n go product.

  • Experience with inventory control.

  • Experience with recipe testing and development.

Shift during the academic year is generally Monday – Friday, 6:30am to 3:00pm. Shift during the summer months are dependent on food truck schedule.

Food Truck related: Preferably possesses a valid driver’s license, meet all State of Montana requirements to operate State/University vehicles, and and have an acceptable driving record (less than 12 points). Please do not send a copy of your driver’s license at this time. If the successful candidate possesses a valid out of state driver’s license, candidate must obtain a valid Montana driver’s license within 60 days.

Food Truck related: if driving, must take all associated safe driving courses and subsequently drive and safely maneuver a 30foot vehicle.

May work evenings, weekends, long hours, consecutive days during busy periods, and occasional holidays as the school and event schedule demands.

May occasionally work outside and in inclement weather assisting with special events.

Serve Safe certified or have the ability to become certified.

Physical Demands

  • Normal kitchen, cooler, freezer, dock environments, and food truck.

  • While in food truck, conduct work in an enclosed spaced for prolonged periods of time where ambient temperatures will not always be regulated.

  • Stationary and/or moving about for long periods of time.

  • Moving product up and down stairs.

  • Frequently moving and transporting containers/product weighing up to 50 lbs and occasionally up to 100lbs.

  • Move and/or position self while stocking product.

  • Use small kitchen utensils and other equipment.

  • Performing repetitive motions such as, but not limited to, chopping, stirring and serving.

  • Exposure to cleaning chemicals on a daily basis.

  • Work for long periods of time at a computer.
